Brain Cutlets




  • 1 brain (goat)
  • 1 onion
  • 1 green chilli
  • 1 egg
  • 2 oz. flour
  • salt, pepper
  • bread crumb
  • 1 slice of bread


Take out the brain, wash and cook it, in the water, till it is ready. Take it off, and remove all the nervy parts from it, with a spoon and fork. Soak 1 big slice of bread in the water. Cut the onion and chilli fine and make the bread crumb. Remove all water, from the slice of bread, which has been soaked and mix it with the cooked brain.

Put flour (to make it thick), salt, pepper, chilli, (according to taste) and mix altogether (if the mixture is sticky do not use egg) soak into the bread crumb and shape it. Then dip into the beaten egg and fry.

  • 1 chicken
  • 2 tomatoes.
  • ½, ¾ tsp. (zeera) cumin seeds,
  • few green chillies slit and seeds removed
  • redchilly powder
  • salt to taste,11/2” thin small pieces, ginger.


Heat oil, remove from fire, and put in the zeera and add the cut (adrak) ginger pieces and fry the chicken pieces adding in half the tomatoes. Keep on slow fire till gravy is dry, then add in the rest of the tomatoes finely cut, and the slit green chillies. Heat little oil, and put in some cumin seeds and bagaar the chicken. Keep on slow fire. Serve with coriander leaves and sour limes.

Another way is to boil the chicken or any meat with ginger, garlic. Fry in little oil and remove from pan. Fry slit green chillies (large 0nes), little (zeera),red chilli powder and salt. Put in the fried chicken with its masala, fry for some time. Serve with lemon.





  • 1 chicken
  • 3 to 4 cloves garlic
  • 1 small papaya
  • 2 red chillies
  • salt to taste
  • 10 very small white onions
  • 4 to 6 firm medium sized tomatoes
  • 30 gms ginger
  • 2 green chillies
  • 30 gms onion
  • 115 gms. curds
  • oil for basting


Cut chicken into 2 inch cubes. Cut chicken into cubes. Grind ginger, garlic, green chillies, onions and red chillies. Mix with curd and salt to taste and pieces of papaya and marinate the chicken in the above mixture and keep for about 2 hours. Put on skewer. Brush with oil and cook on a tawa till done, turning it often to grill evenly.
